What These Violations Mean

The most common high-severity violation this week, appearing at nearly every facility on the list, was employees not reporting illness symptoms. This is not a paperwork problem. Food workers with Norovirus who do not report symptoms and continue handling food are the leading cause of multi-victim outbreaks, and the illness spreads through contact with as few as 18 viral particles.
