Citation Description: Temperature measuring device sensor not located to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit or in the coolest part of a hot food storage unit; cold or hot holding equipment used for time/temperature control for safety food not equipped with at least one integral or permanently affixed temperature measuring device that is located to allow easy viewing of the temperature display; or temperature measuring device not designed to be easily readable. 4-204.112(A), (B) and (D) Observation: Walk in cooler area: No easily visible ambient air thermometer. Citation Description: Cloths in-use for wiping counters and other equipment surfaces not held between uses in a chemical sanitizer solution at a proper concentration as specified in the Food Code. 3-304.14(B)(1) Observation: Warewash area: Sanitizer concentration was approximately 0 ppm chlorine bleach. COS- New batch was made at the proper concentration. Citation Description: Single-service or single-use articles not stored in a clean, dry location; at least 6 inches above the floor; or where they are not exposed to splash, dust, or other contamination. 4-903.11(A) Observation: Warewash area: Boxes of cups stored directly on the floor. COS- Boxes were put on risers. Retail area: Last cup in row not protected from dust or other contamination. COS- Lids were affixed to last cup. Citation Description: Equipment that is fixed because it is not easily moveable not installed with space to allow access for cleaning along the sides, behind or above the equipment; with no more than one thirty-second inch of space from adjoining equipment, walls, or ceiling; or sealed to adjoining equipment or walls when the equipment is exposed to spillage or seepage. Counter-mounted equipment that is not easily moveable not installed to allow cleaning of the equipment or areas underneath or around the equipment by being sealed. 4-402.11 Observation: Warewash area: Warewash sink is not sealed to wall. Citation Description: Nonfood-contact surface of equipment exposed to splash, spillage, or other food soiling or that requires frequent cleaning not constructed of a corrosion-resistant, nonabsorbent, and smooth material. 4-101.19 Observation: Walk in cooler area: The shelving is made of raw wood. Citation Description: Equipment not maintained in good repair or condition; equipment component not kept intact, tight, and adjusted in accordance with manufacturer's specifications; or cutting or piercing part of can opener not kept sharp to minimize the creation of metal fragments that can contaminate food when a container is opened. 4-501.11 Observation: Walk in cooler area: Ambient air temperature is 48.5 degrees F. There are no TCS foods in walk in. COS: Temperature was turned down from 48 degrees F to 37 degrees F. Ambient air temperature is now 40.1 degrees F. Citation Description: Warewashing equipment; sinks, basins or other receptacles used for washing or rinsing raw food or laundering wiping cloths; or drainboards or equipment used to substitute for drainboards not cleaned before use, throughout the day at a frequency necessary to prevent recontamination of equipment and utensils and ensure the equipment performs its intended function, and at least every 24 hours when used. 4-501.14 Observation: Warewash area: Warewash sink was unclean and has some surface rust. COS- Warewash sink was cleaned. Citation Description: Physical facilities not cleaned as often as necessary to keep them clean, or cleaning not done during periods when the least amount of food is exposed such as after closing. 6-501.12 Observation: Walk in cooler area: There is a mold like substance on the walls. Warewash area: Dried old droppings by electrical panel. COS- Area was cleaned and sanitized. Citation Description: The food establishment permit is not conspicuously displayed. 5K-4.020(2)(d) F.A.C.
