MARION COUNTY, FL. A pizza shop in Salt Springs accumulated nine high-severity violations in a single inspection last week, including food sourced from unapproved or unknown suppliers, no written employee health policy, and toxic chemicals stored improperly near food, making it the county's worst performer during the week of July 15 through July 21, 2026.

State inspectors visited 10 facilities across Marion County that week, conducting 11 total inspections. Five of those facilities each drew two or more high-severity violations. The findings ranged from a bar operating without a person in charge to a family sports grill where parasite destruction procedures were not being followed for fish or meat.

Salt Springs Pizza on North Highway 19 drew violations that cut across nearly every major food safety category in a single visit. Inspectors cited the restaurant for having no employee health policy, an employee not reporting illness symptoms, inadequate handwashing facilities, improper handwashing technique, food from unapproved or unknown sources, improperly cleaned food contact surfaces, no consumer advisory for raw or undercooked items, and toxic chemicals stored or labeled improperly. That is eight distinct high-severity categories, plus three intermediate violations, from one inspection of one restaurant.

The food-from-unknown-sources citation alone sets it apart from most of the other facilities flagged this week. When a restaurant cannot document where its food came from, there is no chain of traceability if a customer gets sick.

Shuckers Bar and Grill on SW 16th Street in Ocala was not far behind, with six high-severity violations of its own. Inspectors found no person in charge present or performing duties, no adequate employee health policy, improper handwashing technique, improperly cleaned food contact surfaces, and two separate chemical-related citations: toxic chemicals improperly stored or labeled, and toxic substances improperly identified, stored, or used. Two intermediate violations involved improper sewage or wastewater disposal and improper sanitizing procedures.

The sewage citation at Shuckers is worth noting on its own. Improper wastewater disposal creates a pathway for fecal contamination to spread through a facility, and it appeared at two separate restaurants this week.

Dugout Family Sports Bar and Grill on SE Maricamp Road in Ocala drew five high-severity violations, including one that does not appear at most restaurants: failure to follow parasite destruction procedures. Inspectors also cited Dugout for an employee not reporting illness symptoms, improperly cleaned food contact surfaces, no consumer advisory for raw or undercooked foods, and improperly stored or labeled toxic chemicals. Intermediate violations included improper sewage disposal, multi-use utensils not properly cleaned, and inadequate ventilation and lighting.

Golden Corral on SW College Road in Ocala received three high-severity violations: improper handwashing technique, failure to follow parasite destruction procedures, and toxic substances improperly identified, stored, or used. Its six intermediate violations included inadequate cooling and cold-holding equipment, single-use items improperly reused, improper sewage disposal, inadequate ventilation, and inadequate or improperly maintained toilet facilities. The buffet-style format of the restaurant makes the cold-holding equipment citation particularly consequential, given the volume of food held at temperature for extended periods.

Southern Pig and Cattle Co II on SW Highway 200 received a single high-severity citation: an employee not reporting symptoms of illness. No intermediate violations were noted.

What These Violations Mean

The employee illness reporting failures documented at three separate facilities this week, Southern Pig and Cattle Co II, Salt Springs Pizza, and Dugout Family Sports Bar and Grill, represent one of the most direct transmission routes for foodborne illness. Norovirus, which causes the majority of foodborne illness outbreaks in the United States, spreads readily when infected food workers handle food without disclosing symptoms. A written health policy, which Salt Springs Pizza and Shuckers Bar and Grill both lacked, is the mechanism that gives employees a clear obligation to report and managers a clear basis to act.

The food-from-unapproved-sources violation at Salt Springs Pizza carries a different kind of risk. When food bypasses USDA or FDA inspection, there is no documentation trail if a customer becomes ill. Investigators cannot trace a contaminated ingredient back to its origin, which means an outbreak can grow before its source is identified.

Parasite destruction failures at both Dugout Family Sports Bar and Grill and Golden Corral involve a step that most diners assume happens automatically. Fish served raw or undercooked, and certain cuts of pork and wild game, require specific freezing or cooking protocols to kill parasites including Anisakis in fish and Trichinella in pork. When those protocols are not followed and no consumer advisory is posted, customers have no way to make an informed choice about the risk they are accepting.

The chemical storage violations documented at Salt Springs Pizza, Shuckers Bar and Grill, and Dugout Family Sports Bar and Grill point to a different category of hazard entirely. Cleaning products and sanitizers stored near or above food preparation surfaces can contaminate food directly, and mislabeled chemical containers have caused acute poisoning incidents in commercial kitchens.

The Longer Record

The inspection histories of the five flagged facilities provide additional context for this week's findings. Salt Springs Pizza, which led the county with nine high-severity violations, carries state record identifier SEA5203085, and its citation list this week suggests a facility where foundational food safety systems, written health policies, documented food sourcing, functioning handwashing infrastructure, are either absent or not being maintained. A facility accumulating violations across that many distinct categories in a single visit is not dealing with one overlooked procedure.

Shuckers Bar and Grill, identified under SEA5201697, drew eleven total violations this week across high-severity and intermediate categories. The combination of no person in charge, no employee health policy, improper sanitation procedures, and sewage disposal concerns describes a facility where oversight gaps compound one another. The absence of a responsible manager on site is consistently associated with higher violation counts across the rest of an inspection.

Dugout Family Sports Bar and Grill, under SEA5202674, and Golden Corral, under SEA5202067, both received parasite destruction citations this week. That the same procedural failure appeared at two unrelated facilities in the same county during the same inspection week suggests the violation is not an anomaly at either location.

Southern Pig and Cattle Co II, under SEA5202943, drew the lightest citation load of the five flagged restaurants, but the single violation it received, an employee not reporting illness symptoms, is categorized as a high-severity finding for a reason. One sick worker, one unreported shift, is enough to trigger an outbreak.

Golden Corral's intermediate violation for inadequate cooling and cold-holding equipment remained unresolved as of the inspection record. For a buffet operation moving high volumes of food through extended service periods, equipment that cannot maintain required temperatures is not a background concern.
