OCALA, FL. Inspectors visiting Shuckers Bar and Grill at 408 SW 16th Street on July 15 found toxic chemicals improperly stored and labeled near food, a violation the state classifies as an immediate risk of acute poisoning, and the restaurant was not closed.
That was one of six high-severity violations documented during the visit. Inspectors also cited a second, overlapping chemical violation for toxic substances improperly identified, stored, or used, which state records flag as creating immediate risk of chemical contamination.
What Inspectors Found
Beyond the chemical storage problems, inspectors found food contact surfaces not properly cleaned or sanitized, a violation state records describe as a primary vehicle for bacterial transfer. That same inspection also documented improper hand and arm washing technique, meaning employees were attempting to wash their hands but doing it incorrectly, leaving pathogens in place.
No person in charge was present or performing duties during the visit. The facility also lacked any written employee health policy, or had one the inspector deemed inadequate.
The intermediate violations added to the picture. Inspectors cited improper sewage or wastewater disposal, inadequate cooling and cold-holding equipment, single-use items being reused, improper sanitizing solution or procedures, and inadequate ventilation and lighting. Eleven violations in total.
What These Violations Mean
The two chemical violations, cited separately, both describe the same category of risk: cleaning agents, pesticides, or other toxic substances stored or left unlabeled near food or food-preparation surfaces. The concern is not hypothetical. Mislabeled chemicals have been mistaken for food ingredients, and improperly stored products can contaminate surfaces that later contact food. The state classifies both as high-severity for that reason.
The absence of a written employee health policy is more quietly dangerous. Without a formal policy, there is no mechanism to keep a sick worker from handling food. Norovirus, which the state specifically calls out in its health risk guidance, spreads through exactly this route. It accounts for an estimated 20 million cases of illness in the United States annually.
The improper handwashing technique violation matters because it is distinct from not washing hands at all. An employee who goes through the motions of handwashing without the correct technique, duration, or soap coverage can leave Salmonella, E. coli, or Norovirus on their hands. The inspection record does not say employees skipped handwashing. It says they did it wrong.
Inadequate cooling equipment is a compounding problem. If the cold-holding units cannot maintain required temperatures, every food item stored in them is at risk of entering the bacterial growth range, between 41 and 135 degrees, regardless of how carefully staff handle everything else.
The Longer Record
The July 15 inspection was not an outlier. State records show 34 inspections on file for Shuckers Bar and Grill, with 296 total violations documented across that history.
The three most recent inspections before July 15 all produced significant high-severity counts. The March 2, 2026 visit found seven high-severity and five intermediate violations. The October 20, 2025 inspection found eight high and five intermediate. The April 14, 2025 visit found two high and four intermediate. The July 15 inspection, with six high-severity citations, fits a pattern that has now run for nearly a year.
Shuckers Bar and Grill: Recent Inspection History
The facility's one prior emergency closure came on December 2, 2020, when inspectors ordered it shut for rodent activity. It reopened the following day. The 2024 inspection on August 30 also produced five high-severity and seven intermediate violations, a count that did not result in closure.
Between those high-violation inspections, two visits in June and September 2024 found zero high-severity or intermediate violations. That record suggests the facility is capable of passing inspection. It also makes the sustained pattern of five, six, seven, and eight high-severity violations in consecutive recent inspections harder to explain as circumstance.
