MARION COUNTY, FL. A barbecue restaurant on SW Highway 200 in Ocala racked up 12 high-severity violations in a single inspection last week, including food from unapproved sources, failure to cook food to required minimum temperatures, and no person in charge present or performing duties.

The week of July 13 through July 19, 2026 produced 13 inspections across 12 Marion County facilities. Six of those facilities recorded two or more high-severity violations. The combined high-severity violation count for the county's worst performers alone reached 50.

The Worst of the Week

3HIGHSalt Springs Pizza9 high-severity
4HIGHLet's Eat Fresh8 high-severity

Southern Pig and Cattle Co II at 6105 SW Hwy 200 led the county with 12 high-severity citations and 1 intermediate violation. The inspection record lists food from unapproved or unknown sources, inadequate shell stock identification, parasite destruction procedures not followed, food contact surfaces not properly cleaned or sanitized, and food not cooked to required minimum temperature, all in a single visit.

The absence of a person in charge was also cited. That violation appeared alongside a finding that at least one employee was not reporting symptoms of illness and that handwashing technique was improper, three failures that inspectors and public health researchers treat as a cluster, because each one compounds the others.

Las Margaritas Mexican Restaurant and Gallery at 4414 SW College Rd recorded 10 high-severity and 7 intermediate violations. Inspectors cited the restaurant for having no employee health policy, inadequate handwashing, improper handwashing technique, food from unapproved sources, inadequate shell stock records, parasite destruction failures, improperly cleaned food contact surfaces, and improper use of time as a public health control.

Salt Springs Pizza at 14100 North Hwy 19 in Salt Springs drew 9 high-severity and 3 intermediate violations. The list included no employee health policy, an employee not reporting illness symptoms, inadequate handwashing facilities, improper handwashing technique, food from unapproved sources, improperly cleaned food contact surfaces, no consumer advisory for raw or undercooked foods, and toxic chemicals improperly stored or labeled.

Let's Eat Fresh at 809 N Magnolia Ave in Ocala accumulated 8 high-severity violations. Inspectors found food contaminated by chemical, physical, or biological hazards; toxic chemicals improperly stored or labeled; toxic substances improperly identified, stored, or used; and no allergen awareness demonstrated. Shell stock identification and parasite destruction failures also appeared on the report.

Shuckers Bar and Grill at 408 SW 16th St in Ocala recorded 6 high-severity and 5 intermediate violations. Among the high-severity findings: no person in charge, no employee health policy, improper handwashing technique, improperly cleaned food contact surfaces, and two separate chemical storage violations. Inspectors also cited improper sewage or wastewater disposal and improper sanitizing procedures at the intermediate level.

Dugout Family Sports Bar and Grill at 6833 SE Maricamp Rd rounded out the week's worst performers with 5 high-severity and 3 intermediate violations. Inspectors found an employee not reporting illness symptoms, parasite destruction procedures not followed, improperly cleaned food contact surfaces, no consumer advisory for raw or undercooked foods, and improperly stored or labeled toxic chemicals. An improper sewage disposal citation also appeared at the intermediate level.

What These Violations Mean

Four of the six worst-performing facilities this week, Southern Pig and Cattle Co II, Las Margaritas, Salt Springs Pizza, and Let's Eat Fresh, were cited for food from unapproved or unknown sources. That violation means the food bypassed USDA and FDA inspection at the point of origin. If a customer gets sick, investigators cannot trace the product back through a licensed supply chain. Listeria, Salmonella, and E. coli are among the pathogens that licensed inspection is designed to catch before food reaches a kitchen.

Three of the same facilities, Southern Pig and Cattle Co II, Las Margaritas, and Salt Springs Pizza, were cited for parasite destruction failures. Parasites including Anisakis in fish and Trichinella in pork survive when proper freezing or cooking protocols are skipped. Consuming undercooked fish or pork from a kitchen that has not followed destruction procedures carries a direct risk of parasitic infection.

The employee illness reporting failures at Southern Pig and Cattle Co II, Salt Springs Pizza, and Dugout Family Sports Bar and Grill represent a different category of risk. Norovirus, the most common cause of foodborne illness outbreaks in restaurant settings, spreads through food handlers who work while symptomatic. A single infected employee can expose every customer served during a shift. Without a written health policy, as was also missing at Las Margaritas, Salt Springs Pizza, Let's Eat Fresh, and Shuckers, there is no documented standard for when an employee must stay home.

Let's Eat Fresh drew two separate chemical-related high-severity citations alongside a finding of food contaminated by chemical, physical, or biological hazards and no allergen awareness. That combination is notable because it points to multiple simultaneous failure modes involving non-microbial hazards, the kind that cause acute reactions rather than infections that develop over hours or days. Allergen reactions send roughly 30,000 Americans to emergency rooms annually.

The Longer Record

The inspection data this week does not include prior inspection counts for these facilities, which limits how much the historical record can be quantified. What the violation profiles do show is that several of these restaurants accumulated citations across multiple violation categories simultaneously, which inspectors and public health researchers associate with systemic management failures rather than isolated oversights.

Southern Pig and Cattle Co II's 12-violation inspection stands out not just for the count but for the range. The citations span food sourcing, cooking temperatures, shellfish traceability, parasite protocols, surface sanitation, illness reporting, and management presence. When violations cluster across that many independent categories in a single visit, the record suggests the problems are not confined to one area of the kitchen.

Shuckers Bar and Grill drew citations in two separate chemical safety categories at the high-severity level, plus improper sewage disposal and improper sanitizing procedures at the intermediate level. The sewage violation is particularly significant because improper wastewater disposal creates fecal contamination risk throughout a facility, not just at one station.

Las Margaritas recorded 17 total violations across high-severity and intermediate categories, the highest combined count of any facility inspected this week. Among those 17, the improper use of time as a public health control is a violation that only applies when a facility has specifically opted to use time rather than temperature to keep food safe. When that protocol is used incorrectly, food sits in the bacterial growth zone, between 41 and 135 degrees Fahrenheit, for longer than the allowable window, with no temperature record to show when the clock started.
