The violations at Salem's covered nearly every category that public health officials consider most dangerous. Inspectors cited the restaurant for food from an unapproved or unknown source, inadequate shell stock identification, food contact surfaces not properly cleaned or sanitized, toxic chemicals improperly stored or labeled, toxic substances improperly identified or stored, no consumer advisory for raw or undercooked foods, no allergen awareness demonstrated, and an employee not reporting symptoms of illness.

That is eight distinct high-severity findings in one visit, plus three intermediate violations.

ATL Deli Tampa on East Hillsborough Avenue matched that count with 7 high-severity violations of its own, including toxic chemicals improperly stored or labeled, food from an unapproved source, and time as a public health control not properly used, in addition to handwashing failures and unsanitized food contact surfaces.

China Wok on Ehrlich Road was cited for 7 high-severity violations, including no employee health policy, no reporting of illness symptoms, improper handwashing technique, food from an unapproved source, inadequate shell stock records, improperly cleaned food contact surfaces, and no consumer advisory.

What These Violations Mean

The illness-reporting and employee health policy violations documented at Salem's Fresh Eats, Jalsa, ATL Deli, China Wok on Ehrlich, Jerk Pit, El Churrascaso, Shriyas Kitchen, Top China, China Wok of Fiesta Plaza, and Pisco Express are not paperwork failures. Norovirus, the leading cause of foodborne illness in the United States, spreads most efficiently when a sick food worker handles food without restriction. A written health policy that requires employees to report symptoms before their shift is the single most direct mechanism for preventing that transmission. When that policy does not exist, or when employees are not following it, the kitchen has no mechanism to remove a contagious worker from food contact.

The unapproved food source violations at Salem's Fresh Eats, Jalsa, ATL Deli, China Wok on Ehrlich, Jerk Pit, and Garden Gyro's carry a specific consequence that goes beyond the food itself: traceability. NCG Cinema at Citrus Park Town Center has 14 prior inspections. The finding that no person in charge was present or performing duties at a concession operation inside an active mall cinema, combined with dual handwashing violations and improperly stored toxic substances, remains unresolved in this week's records.
