MARION COUNTY, FL. An Ocala barbecue restaurant racked up 12 high-severity violations in a single inspection this week, including food sourced from unapproved suppliers, undercooking failures, and a finding that no one in charge was present or performing oversight duties.

Southern Pig and Cattle Co II on SW Hwy 200 led the county's worst performers for the week of July 11 through July 17, 2026. The inspection turned up 13 violations total, 12 of them high-severity, a tally that touches nearly every category of food safety risk: sourcing, cooking temperatures, surface sanitation, shellfish traceability, parasite destruction, and employee illness reporting.

Five other Marion County restaurants also recorded five or more high-severity violations during the same seven-day stretch.

2HIGHLas Margaritas Mexican Restaurant10 high-severity
3HIGHSalt Springs Pizza9 high-severity
4HIGHLet's Eat Fresh8 high-severity
5MEDShuckers Bar and Grill6 high-severity
6MEDDugout Family Sports Bar and Grill5 high-severity

At Southern Pig and Cattle Co II, inspectors cited the restaurant for food arriving from unapproved or unknown sources, for failing to follow parasite destruction procedures, and for not cooking food to required minimum temperatures. Shell stock identification records were also inadequate, a violation that applies when shellfish cannot be traced back to a certified harvester if someone falls ill.

Las Margaritas Mexican Restaurant and Gallery on SW College Road recorded 10 high-severity and 7 intermediate violations, the highest intermediate count of any facility this week. Inspectors cited the restaurant for having no written employee health policy, for food from unapproved sources, for inadequate and improperly performed handwashing, and for failing to properly use time as a public health control, meaning food was held in the temperature danger zone longer than permitted without adequate tracking.

Salt Springs Pizza on North Hwy 19 in Salt Springs drew nine high-severity citations, including a finding that handwashing facilities themselves were inadequate, a structural problem that makes proper hygiene impossible regardless of employee intent. Inspectors also cited the restaurant for toxic chemicals stored or labeled improperly, food from unapproved sources, and no consumer advisory for raw or undercooked menu items.

Let's Eat Fresh on N Magnolia Ave recorded eight high-severity violations, including two separate chemical safety citations: toxic chemicals improperly stored or labeled, and toxic substances improperly identified, stored, or used. Inspectors also found food contaminated by chemical, physical, or biological hazards, and cited the restaurant for no demonstrated allergen awareness.

Shuckers Bar and Grill on SW 16th Street drew six high-severity violations, including no person in charge present or performing duties and no written employee health policy. Inspectors also documented improper sewage or wastewater disposal, an intermediate violation that signals a sanitation failure extending beyond food handling into the facility's basic infrastructure.

Dugout Family Sports Bar and Grill on SE Maricamp Road rounded out the week's worst performers with five high-severity violations, including employees not reporting illness symptoms, parasite destruction procedures not followed, and toxic chemicals improperly stored. Like Shuckers, Dugout also drew a sewage disposal violation.

What These Violations Mean

The food-from-unapproved-sources citation appeared at three facilities this week: Southern Pig and Cattle Co II, Las Margaritas, and Salt Springs Pizza. When food arrives from a supplier that has not been inspected and certified by federal or state regulators, there is no chain of custody if someone gets sick. Listeria, Salmonella, and E. coli can enter the supply chain at the farm, processing plant, or transport stage, and without documentation, public health investigators have no starting point for a traceback.

Parasite destruction failures at Southern Pig and Cattle Co II, Let's Eat Fresh, and Dugout Family Sports Bar and Grill carry a different but equally serious risk. Fish served raw or lightly cooked, including sushi-grade items, must be frozen to specific temperatures for specific durations to kill parasites such as Anisakis. Pork and wild game carry Trichinella. When those freezing protocols are skipped or undocumented, customers eating raw or undercooked items are exposed to parasites that cause severe gastrointestinal illness.

The handwashing pattern across this week's inspections is particularly concerning. At Salt Springs Pizza, inspectors found the handwashing facilities themselves were inadequate, not just the technique. At Southern Pig and Cattle Co II, Las Margaritas, Let's Eat Fresh, and Shuckers, inspectors cited improper washing technique specifically, meaning employees were going through the motions without effective pathogen removal. Hands are the most common vehicle for transmitting Norovirus and Salmonella from person to food.

The chemical storage violations at Let's Eat Fresh and Shuckers Bar and Grill represent a different category of hazard entirely. Cleaning agents and sanitizers stored near or above food, or in unlabeled containers, can cause acute chemical poisoning. At Let's Eat Fresh, inspectors issued two separate chemical citations, suggesting systemic disorganization rather than a single misplaced bottle.

The Longer Record

The data does not include prior inspection counts for the facilities featured this week, which limits the ability to place these findings in a longer historical context. What the current record does establish is that six of the twelve facilities inspected in Marion County during this seven-day period had five or more high-severity violations, a concentration of serious findings across more than half the week's inspected restaurants.

Southern Pig and Cattle Co II's 12 high-severity violations in one visit represent a sweep of the most consequential food safety categories: sourcing, cooking, surface sanitation, shellfish records, parasite protocols, illness reporting, and management oversight. That combination, sourcing failures alongside cooking failures alongside no person in charge, suggests the problems are not isolated to one station or one employee.

Las Margaritas added 7 intermediate violations on top of its 10 high-severity citations, the highest combined tally of the week at 17 total violations. The intermediate violations at that level often reflect systemic record-keeping and procedural failures that compound the high-severity findings rather than sitting alongside them independently.

Salt Springs Pizza's inadequate handwashing facilities citation is notable because it is a physical infrastructure problem, not a behavioral one. A restaurant cannot correct technique if the sinks, soap, or drying equipment are insufficient. That violation, combined with nine high-severity citations overall, makes Salt Springs Pizza one of the week's most structurally compromised facilities outside of Ocala proper.
