MANATEE COUNTY, FL. A Parrish restaurant called Idalia accumulated seven high-severity violations in a single inspection this week, more than any other facility in the county, including findings that inspectors flagged for shellfish traceability failures, improper use of time as a public health control, and no written employee illness policy.

State inspectors visited 57 facilities across Manatee County between July 7 and July 13, conducting 59 total inspections. Twelve of those facilities left with two or more high-severity violations on record.

Restaurant Idalia at 8743 Fort Hamer Road led the county with seven high-severity violations and three intermediate ones. Inspectors cited the restaurant for having no consumer advisory for raw or undercooked foods, inadequate shell stock identification records, and an employee not reporting illness symptoms, alongside the failure to properly use time as a public health control and food found in poor condition.

Culver's of Parrish at 10824 US 301 N drew six high-severity violations with no intermediate citations. The person in charge was not present or not performing duties. Inspectors also documented food from an unapproved or unknown source, food in poor condition, improper handwashing technique, an employee not reporting illness symptoms, and food contact surfaces that were not properly cleaned or sanitized.

Ren Hibachi Buffet at 3616 1st Street West in Bradenton matched Culver's total with six high-severity violations. Among them: parasite destruction procedures not followed for fish or other high-risk proteins, toxic chemicals improperly stored or labeled near food, and food contact surfaces not properly cleaned. The buffet also had no person in charge present and an employee not reporting illness symptoms.

Sweet Krunch Korean Chicken at 5605 Manatee Avenue West also accumulated six high-severity violations. Inspectors found food from an unapproved source, inadequate shell stock identification records, parasite destruction procedures not followed, food not cooked to the required minimum temperature, improper handwashing technique, and toxic chemicals improperly stored or labeled.

Burger and Pancake House at 1631 8th Avenue West in Palmetto rounded out the six-violation group. The person in charge was not present. Inspectors cited the restaurant for food from an unapproved source, food contact surfaces not properly cleaned, no consumer advisory for raw or undercooked foods, toxic chemicals improperly stored, and an employee not reporting illness symptoms.

Hungry Greek at 8980 US Highway 301 N in Parrish drew five high-severity violations, including food in poor condition, no consumer advisory for raw or undercooked foods, improper handwashing technique, food contact surfaces not properly cleaned, and an employee not reporting illness symptoms.

Wendy's at 5420 Manatee Avenue in Bradenton also produced five high-severity violations. The inspector found no person in charge on duty, an employee not reporting illness symptoms, improper handwashing technique, food contact surfaces not properly cleaned, and inadequate shell stock identification records for a fast food chain that serves seafood items.

Charley's Cheesesteaks at 2911 53rd Avenue East drew five high-severity citations, including parasite destruction procedures not followed, time as a public health control not properly used, required procedures for specialized processes not followed, improper handwashing technique, and an employee not reporting illness symptoms.

Pork Belly's Eatery and Catering Co. at 9516 Cortez Road West was cited for five high-severity violations, including no employee health policy, improper handwashing technique, inadequate shell stock identification records, no consumer advisory for raw or undercooked foods, and no allergen awareness demonstrated.

Len-Medley at Prosperity Club at 12025 Prosperity Lakes Boulevard drew four high-severity violations: no employee health policy, food from an unapproved source, time as a public health control not properly used, and no consumer advisory for raw or undercooked foods.

Avocado's Cocina Mexicana and Bar at 6510 Cortez Road West closed out the list with four high-severity violations, including parasite destruction procedures not followed, food contact surfaces not properly cleaned, improper handwashing technique, and no allergen awareness demonstrated.

Not every facility this week performed poorly. Bonefish Grill at 7456 West Cortez Road drew just one intermediate violation, for inadequate cooling or cold holding equipment, with no high-severity citations recorded.

What These Violations Mean

The single most common high-severity violation across Manatee County this week was an employee not reporting illness symptoms, cited at Restaurant Idalia, Culver's of Parrish, Ren Hibachi Buffet, Burger and Pancake House, Hungry Greek, Wendy's, and Charley's Cheesesteaks. Food workers who are ill and do not report it are the primary driver of multi-victim outbreaks. Norovirus, which can be shed in enormous quantities before a worker feels sick, spreads through direct food contact and lingers on surfaces for days.

Food from unapproved or unknown sources, cited at Culver's of Parrish, Sweet Krunch Korean Chicken, Burger and Pancake House, and Len-Medley at Prosperity Club, means food bypassed USDA and FDA inspection channels entirely. If a customer gets sick from that food, there is no supply chain record to trace, no lot number to pull, and no way to identify other affected consumers quickly.

Parasite destruction failures, documented at Ren Hibachi Buffet, Sweet Krunch Korean Chicken, Charley's Cheesesteaks, and Avocado's Cocina Mexicana and Bar, represent a specific danger when fish or pork is served raw or undercooked. Without proper freezing to required temperatures and durations, or sufficient cooking, parasites including Anisakis in fish and Trichinella in pork remain viable and can cause serious gastrointestinal illness.

Toxic chemicals improperly stored or labeled, found at Ren Hibachi Buffet, Sweet Krunch Korean Chicken, and Burger and Pancake House, carry a straightforward risk: a mislabeled or misplaced chemical near food preparation areas can contaminate food directly, or a worker can confuse a chemical container for a food ingredient. The result is acute chemical poisoning, not a gradual illness.

The Longer Record

Several of this week's worst performers are not new to state scrutiny. Ren Hibachi Buffet and Pork Belly's Eatery and Catering Co. both carry prior inspection histories that place this week's findings in a broader pattern rather than an isolated bad day.

Restaurant Idalia's seven high-severity violations stand out partly because the facility's citation for inadequate shell stock identification records and no consumer advisory for raw or undercooked foods suggests systemic gaps in how the kitchen tracks high-risk ingredients, not a one-time oversight.

Wendy's on Manatee Avenue is a chain location with corporate compliance infrastructure behind it. The fact that an inspector found no person in charge on duty, an employee not reporting illness symptoms, and food contact surfaces not properly cleaned at a franchise with standardized training protocols makes the findings harder to attribute to inexperience.

Charley's Cheesesteaks at 2911 53rd Avenue East drew a citation for required procedures for specialized processes not followed, a violation that applies to techniques like reduced-oxygen packaging or curing that require precise controls. A cheesesteak operation with that citation on record raises questions about what specialized process was in use and whether it had been approved and documented.
