MANATEE COUNTY, FL. A Fort Hamer Road restaurant in Parrish walked into the week of July 6 with no written employee health policy, no consumer advisory for raw foods, shellfish with no traceability records, and food inspectors described as being in poor condition — seven high-severity violations in a single visit, the worst tally in Manatee County that week.
Restaurant Idalia at 8743 Fort Hamer Rd led all 48 facilities inspected across the county during the July 6-12 period. Inspectors also cited the restaurant for improper handwashing technique, failure to properly use time as a public health control, and inadequate cooling equipment. Ten violations total.
The week's inspection data covered 50 visits to 48 facilities. Twelve of those facilities accumulated two or more high-severity violations.
The Violations
Three facilities tied for second place with six high-severity violations each. Culver's of Parrish at 10824 US 301 N had no person in charge present or performing duties, an employee who failed to report illness symptoms, improper handwashing, food from an unapproved or unknown source, food in poor condition, and food contact surfaces that were not properly cleaned or sanitized.
Sweet Krunch Korean Chicken at 5605 Manatee Ave W in Bradenton drew six high-severity violations including food from an unapproved source, inadequate shellfish identification records, failure to follow parasite destruction procedures, food not cooked to the required minimum temperature, and toxic chemicals improperly stored or labeled.
Ren Hibachi Buffet at 3616 1st St W in Bradenton also reached six high-severity violations. Inspectors cited the restaurant for having no person in charge, an employee not reporting illness symptoms, failure to follow parasite destruction procedures, food contact surfaces not properly cleaned, improper use of time as a public health control, and toxic chemicals stored or labeled incorrectly.
Pork Bellys Eatery and Catering Co. at 9516 Cortez Rd W in Bradenton drew five high-severity violations, including no written employee health policy, improper handwashing, inadequate shellfish records, no consumer advisory for raw or undercooked foods, and no allergen awareness demonstrated by staff.
Wendy's at 5420 Manatee Ave in Bradenton also reached five high-severity violations. Inspectors found no person in charge, an employee failing to report illness symptoms, improper handwashing, inadequate shellfish records, and food contact surfaces not properly cleaned or sanitized.
Hungry Greek at 8980 US Hwy 301 N, Suite 118 in Parrish collected five high-severity violations: an employee not reporting illness symptoms, improper handwashing, food in poor condition, food contact surfaces not properly cleaned, and no consumer advisory for raw or undercooked foods.
Charley's Cheesesteaks at 2911 53rd Ave E in Bradenton rounded out the five-violation tier. Inspectors cited the restaurant for an employee not reporting illness, improper handwashing, failure to follow parasite destruction procedures, improper use of time as a public health control, and failure to follow required procedures for specialized processes.
Siam Thai at 5763 Manatee Ave W, Avocado's Cocina Mexicana and Bar at 6510 Cortez Rd W, and Len-Medley at Prosperity Club at 12025 Prosperity Lakes Blvd each drew four high-severity violations. Siam Thai's citations included toxic chemicals improperly stored and no allergen awareness. Avocado's was cited for failure to follow parasite destruction procedures and no allergen awareness. Len-Medley drew violations for food from an unapproved source and no consumer advisory.
One facility stood apart for a different reason. Bonefish Grill at 7456 W Cortez Rd in Bradenton drew just one intermediate violation for inadequate cooling equipment, the lightest citation among the named facilities this week.
What These Violations Mean
The single most common high-severity violation across Manatee County this week was improper handwashing technique, cited at Restaurant Idalia, Culver's of Parrish, Sweet Krunch Korean Chicken, Pork Bellys Eatery, Wendy's, Hungry Greek, Charley's Cheesesteaks, Siam Thai, and Avocado's Cocina. The violation does not mean employees skipped handwashing entirely. It means the technique was wrong enough that pathogens remained on hands after the attempt, and those hands then touched food.
Failure to report illness symptoms was documented at Restaurant Idalia, Culver's of Parrish, Ren Hibachi Buffet, Wendy's, Hungry Greek, Charley's Cheesesteaks, and Siam Thai. Food workers with active Norovirus symptoms are the documented primary cause of multi-victim outbreaks. A single sick employee who handles ready-to-eat food can infect dozens of customers before any illness is reported.
Food from unapproved or unknown sources was cited at Culver's of Parrish, Sweet Krunch Korean Chicken, and Len-Medley at Prosperity Club. When food bypasses USDA or FDA inspection, there is no traceability if customers become sick. Investigators cannot identify the contaminated lot, cannot issue a recall, and cannot determine how many other facilities received the same product.
Parasite destruction procedures were not followed at Sweet Krunch Korean Chicken, Ren Hibachi Buffet, Charley's Cheesesteaks, and Avocado's Cocina. This violation applies to fish, pork, and wild game that must be frozen to a specific temperature for a specific duration before serving raw or undercooked. Without that step, parasites including Anisakis in fish and Trichinella in pork remain viable.
The Longer Record
Several of the week's worst performers are relatively new to the state's inspection system, which makes the volume of high-severity citations more notable, not less. Restaurant Idalia and Len-Medley at Prosperity Club both carry URL slugs with SEA numbers in the 5106000 range, consistent with recently licensed facilities. Accumulating seven and four high-severity violations respectively in what appear to be early inspections suggests foundational food safety practices were not in place at opening.
Ren Hibachi Buffet's record identifier falls in the 5105000 range, placing it among facilities with a somewhat longer operating history in the state system. Six high-severity violations at a buffet operation, where food sits in open serving vessels for extended periods, carries compounded risk. The combination of no person in charge, improper time controls, and improperly cleaned food contact surfaces at a buffet means the window for bacterial growth is wide and the oversight to catch it is absent.
Wendy's on Manatee Avenue and Siam Thai both carry lower SEA numbers, indicating longer inspection histories in the state database. A franchise location with an established corporate food safety program drawing five high-severity violations, including no person in charge and an employee not reporting illness, points to a gap between corporate policy and what is actually happening on the floor of that specific location.
Pork Bellys Eatery and Catering Co. was cited for no allergen awareness demonstrated by staff. Allergen failures are among the most acutely dangerous violations for individual customers. Unlike a foodborne illness that typically requires a threshold dose, a single allergenic exposure can trigger anaphylaxis. The facility also had no consumer advisory for raw or undercooked foods and no written employee health policy, three foundational documentation failures in one visit.
Charley's Cheesesteaks drew a citation for failure to follow required procedures for specialized processes. That violation category covers smoking, curing, fermenting, and reduced-oxygen packaging, all processes that can produce botulism or other toxins if temperature and time controls are not precisely maintained. The citation appeared alongside a failure to properly use time as a public health control, suggesting time management was a consistent problem during that inspection.
