FORT MYERS, FL. Le Goute on Fowler Street drew seven high-severity violations in a single inspection during the week of June 8, including findings that no employee health policy existed, that employees were not reporting illness symptoms, and that food contact surfaces were not properly cleaned or sanitized. It was the highest violation count among 11 Fort Myers facilities that inspectors cited for serious health code failures in one week.
The seven high-severity citations at Le Goute placed it at the top of a crowded field. The violations also included an absent or non-performing person in charge, improper handwashing technique, food in poor condition or mislabeled, and no consumer advisory for raw or undercooked items. Two intermediate violations, both involving inadequate cooling and cold holding equipment, rounded out the inspection report.
The Violations
Key Lime Bistro at 11000 Terminal Access Road followed with five high-severity violations. Inspectors found no person in charge present or performing duties, no employee health policy, inadequate handwashing facilities, food not cooked to required minimum temperatures, and toxic substances improperly identified, stored, or used. An intermediate violation for improper sewage or wastewater disposal was also cited.
Metro Cafe on Metro Parkway drew four high-severity violations, all in the same cluster of worker-hygiene failures that appeared repeatedly across this week's inspections: no employee health policy, employees not reporting illness symptoms, improper handwashing technique, and food contact surfaces not properly cleaned or sanitized.
Heritage Palms Country Club on Washingtonia Palm Way was cited for three high-severity violations with a different character: inadequate shell stock identification and records, parasite destruction procedures not followed, and food contact surfaces not properly cleaned or sanitized. An intermediate violation for improperly cleaned multi-use utensils was also noted.
Marina at Edison Ford and Pinchers Crab Shack Upstairs at 2360 West First Street was cited for parasite destruction procedures not followed and food contact surfaces not properly cleaned or sanitized, along with intermediate violations for inadequate ventilation and lighting and inadequate or improperly maintained toilet facilities.
Taco Works on Hendry Street drew two high-severity violations: parasite destruction procedures not followed and required procedures for specialized processes not followed. A single intermediate violation for improperly cleaned multi-use utensils accompanied those findings.
Capones Coal Fired Pizza on First Street was cited for improper handwashing technique and no consumer advisory for raw or undercooked foods, plus an intermediate for improperly cleaned multi-use utensils.
Cowboy Up Saloon at 1609-1611 Hendry Street drew citations for food in poor condition or mislabeled and no allergen awareness demonstrated. An intermediate violation for improper sewage or wastewater disposal was also recorded.
Chuck Lager Legendary Kitchen on University Plaza Drive was cited for food not cooked to required minimum temperatures and no consumer advisory for raw or undercooked foods, with an intermediate for inadequate ventilation and lighting.
10 Twenty Five on Patio de Leon was cited for inadequate handwashing facilities and parasite destruction procedures not followed, along with an intermediate for improperly cleaned multi-use utensils.
Farmers Market Restaurant on Edison Avenue drew one high-severity violation for food contact surfaces not properly cleaned or sanitized and an intermediate for inadequate cooling and cold holding equipment.
What These Violations Mean
The cluster of illness-related violations at Le Goute and Metro Cafe represents some of the most direct public health risks inspectors can document. When a facility has no written employee health policy and inspectors find workers not reporting illness symptoms, those two findings together describe a kitchen with no structural barrier between a sick employee and the food on your plate. Norovirus, which causes roughly 20 million illnesses in the United States each year, spreads most efficiently through exactly this route.
Improper handwashing technique, cited at Le Goute, Metro Cafe, and Capones Coal Fired Pizza, is a distinct problem from simply not washing hands. An employee who goes through the motions of handwashing but uses incorrect technique can leave pathogens on their hands even after a washing attempt. Studies show proper technique removes more than 99 percent of certain pathogens; improper technique can leave most of them behind.
The parasite destruction violations cited at Heritage Palms Country Club, Marina at Edison Ford and Pinchers Crab Shack, Taco Works, and 10 Twenty Five carry a specific and underappreciated risk. Fish served raw or undercooked, including sushi and ceviche preparations, can harbor parasites including Anisakis and tapeworm. The required control measure is precise freezing to kill those organisms before service. When that step is skipped or improperly documented, the customer has no protection.
The shellfish traceability violation at Heritage Palms Country Club adds a different layer of risk. Shell stock identification tags are required so that if multiple customers fall ill after eating oysters or clams, investigators can trace the harvest lot back to its source and pull it from circulation. Without those records, an outbreak investigation stalls and more people can get sick before the source is identified.
The Longer Record
Le Goute's seven high-severity violations this week sit against a record of 47 prior inspections, the longest inspection history of any facility in this week's group. That volume of prior visits makes this week's findings harder to explain as a first-time stumble. Facilities with that many inspections on record have had repeated opportunities to bring their practices into compliance.
Farmers Market Restaurant on Edison Avenue has 36 prior inspections on record and still drew a high-severity citation for food contact surface sanitation this week, the same category of violation that appeared at Le Goute, Metro Cafe, Heritage Palms Country Club, and Marina at Edison Ford and Pinchers Crab Shack. Food contact surface sanitation is among the most fundamental requirements in a commercial kitchen. Its repeated appearance across facilities with long inspection histories is a pattern worth noting.
Heritage Palms Country Club and Capones Coal Fired Pizza each carry 26 and 29 prior inspections respectively, and both drew violations in categories, including improper cleaning of food contact surfaces and multi-use utensils, that are not new territory for experienced facilities. Metro Cafe, with 25 prior inspections, was cited for four high-severity violations, all in the employee health and hygiene category.
The newest facilities in this week's data tell a different story. Chuck Lager Legendary Kitchen has only three prior inspections on record and already drew two high-severity citations, including food not cooked to required minimum temperatures. Key Lime Bistro has just four prior inspections and drew five high-severity violations, including toxic substances improperly stored and inadequate handwashing facilities. Whether those early citations reflect growing pains or a more persistent pattern is something only the next round of inspections will answer.
