The label for the Mango Poppy Dressing lacked the following ingredients: potassium sorbate, sodium benzoate, citric acid and Dura Gel (food starch). Corrective Action- Manager & Owner called label supplier to correct labels. - An updated label was provided during the visit. o 117.10 Citation Description: Employees did not wash hands thoroughly (and sanitizing if necessary to protect against contamination with undesirable microorganisms) in an adequate hand-washing facility before starting work, after each absence from the work station, and at any other time when the hands may have become soiled or contaminated. 21 CFR 117.10(b)(3) Observation: Lack of hand washing for employee engaged in ready-to-eat cold filled mango poppy dressing. Employee observed touching unclean yellow hose, hose nozzle, bottom of bucket sitting on wet floor, touching hair and then continuing to handle mango puree, sugar, vinegar and other ingredients. Corrected on Site: Employee was instructed to wash and sanitize hands. x 117.35(d) Citation Description: Food-contact surfaces or utensils not cleaned as frequently as necessary to protect against allergen cross-contact and against contamination of food. 21 CFR 117.35(d) Observation: The interior and exterior of the hose connector used to pump vinegar from a bulk drum of vinegar was observed unclean with black residue. Corrected on Site: Employee removed the hose, washed and sanitized the hose during visit. x 117.40(f) Citation Description: Instruments and controls used for measuring, regulating, or recording temperatures, pH, acidity, water activity, or other conditions that control or prevent the growth of undesirable microorganisms in food not accurate, precise and adequately maintained, and not adequate in number for their designated uses. 21 CFR 117.40(f) Observation: The primary instrument for use in the pH determination was not accurate, precise, and adequately maintained, as evidenced by several attempts to obtain a stable/steady reading.
