Retail- Chicken Caesar Sandwiches made at 11:44 am and held in retail at 02:10 pm had internal temperatures of 45 degrees F. COS- Sandwiches were moved to the walk in cooler to properly cool down to 41 or below, before making available for consumer self service. x
