91 The food establishment did not register as a Food Facility with the United States Food and Drug Administration (FDA) prior to beginning of manufacturing/processing, packing or holding food for consumption in the United States. 5K-4.002(D) F.A.C., 21 CFR 1, Subpart H.
Specifically, food establishment has not registered with FDA, information and link has been sent by email to facility owner. o 117.10 Citation Description: Employees did not wash hands thoroughly (and sanitizing if necessary to protect against contamination with undesirable microorganisms) in an adequate hand-washing facility before starting work, after each absence from the work station, and at any other time when the hands may have become soiled or contaminated. 21 CFR 117.10(b)(3) Observation: Specifically, observed employee changing tasks, leaving processing area, and returning to continue working processing food without washing hands. COS, employee washed hands and wore gloves to continue processing food. x 117.10 Citation Description: Hair nets, headbands, caps, beard covers, or other effective hair restraints not worn where appropriate or in an effective manner. 21 CFR 117.10(b)(6) Observation: Specifically, observed employees working in the manufacturing of food products not wearing beard cover. COS, employee put on beard cover. x 117.10 Citation Description: Employee did not remove all unsecured jewelry and other objects that might fall into food, equipment, or containers, or remove hand jewelry that cannot be adequately sanitized during periods in which food is manipulated by hand. If such hand jewelry cannot be removed, it may be covered by material which can be maintained in an intact, clean, and sanitary condition and which effectively protects against the contamination by these objects of the food, food-contact surfaces, or food-packaging materials. 21 CFR 117.10(b)(4) Observation: Specifically, observed employee wearing uncovered earrings while processing food products. o Citation Description: You did not implement your process preventive controls. 117.135(a)(1) Observation: Specifically, the establishment does not monitor coolers temperature where products are held for food safety, you must implement temperature monitoring procedures to ensure the safety of the products stored under refrigeration. o 117.135(a) (1) Print Date: 10/3/2023 Page 1 of 3 117.20(b) Citation Description: Sufficient space not provided for placement of equipment or storage of materials as necessary for the maintenance of sanitary operations and the production of safe food. 21 CFR 117.20(b)(1) Observation: Specifically, observed pallets of merchandise, boxes, and packaging material stored too close to the walls, not allowing for proper cleaning and inspection of the food establishment. o 117.20(b) Citation Description: The plant is not constructed in such a manner as to allow floors, walls, or ceilings to be adequately cleaned and kept clean or to be kept in good repair. 21 CFR 117.20(b)(4) Observation: Specifically, observed floor in disrepair in the ware wash area of processing room. Information to submit required qualified facility attestation has been emailed to food entity. o 117.35(a) Citation Description: Cleaning and sanitizing of utensils and equipment not conducted in a manner that protects against allergen cross-contact and against contamination of food, food-contact surfaces, or food packaging materials. 21 CFR 117.35(a) Observation: Specifically, observed establishment lacking test strips to test strength of sanitizing solution. COS, test strips were provided during inspection. x 117.37(a) Citation Description: Hand-washing facilities not designed to ensure that an employees hands are not a source of contamination of food, food-contact surfaces, or food-packaging materials. 21 CFR 117.37(e) Observation: Specifically, observed no hand sanitizer at hand sink in RTE food processing area.
