JACKSONVILLE, FL. Inspectors visiting Time Out Sports Grill on Beach Boulevard on September 8 found that the restaurant had not followed parasite destruction procedures for fish on its menu, a failure that can leave customers exposed to live parasites including Anisakis roundworm and tapeworm in undercooked or improperly handled seafood.

That was one of six high-severity violations documented that day. The restaurant was not closed.

Inspectors cited the restaurant for inadequate shell stock identification and records, meaning oysters, clams, or mussels on the premises could not be traced to a certified source. If a customer becomes ill from contaminated shellfish, the absence of those records makes it nearly impossible to identify where the shellfish came from or pull the supply chain.

Inspectors also found that food contact surfaces had not been properly cleaned or sanitized, a violation that creates a direct pathway for bacteria to transfer from one food to another. Cutting boards, prep surfaces, and utensils that carry residue from raw proteins can contaminate ready-to-eat foods that follow.

The hand-washing citation adds another layer. Inspectors documented improper technique, not the absence of handwashing, but handwashing done incorrectly. Pathogens can survive an incomplete wash and transfer directly to food being prepared.

Toxic chemicals were found improperly stored or labeled near the food operation. Mislabeled or improperly stored cleaning agents can contaminate food through direct contact or accidental misuse, and the consequences can be acute.

Shellfish filter large volumes of water and can concentrate pathogens, including Vibrio bacteria and norovirus, from their environment. Certified harvest records exist precisely so that contaminated batches can be recalled and illnesses can be investigated. Without those records at Time Out Sports Grill, there is no chain of custody if someone gets sick.

The consumer advisory violation affects the most vulnerable diners directly. Elderly customers, pregnant women, young children, and people with compromised immune systems face elevated risk from raw or undercooked proteins. A required advisory on the menu gives those customers the information they need to make a different choice. Without it, they have no warning.
