ST. PETERSBURG, FL. An employee at Mr & Mrs Crab on Crosswinds Drive North was not reporting symptoms of illness to management, according to state inspection records from July 24, 2026. The restaurant was not emergency-closed.
That single violation, one of six high-severity citations documented during the visit, represents one of the most direct routes to a multi-victim foodborne illness outbreak. It was not the only serious finding inspectors recorded that day.
What Inspectors Found
The inspection on July 24 produced 11 total violations: 6 high-severity and 5 intermediate. Among the high-severity citations, inspectors found that the person in charge was not present or not performing supervisory duties. That absence correlates directly with what followed.
Food contact surfaces were not properly cleaned or sanitized, a condition that creates a direct bacterial transfer route to every plate leaving the kitchen. Inspectors also cited improper hand and arm washing technique, meaning employees were washing their hands but not correctly, leaving pathogens in place.

What These Violations Mean
The illness-reporting violation is the one that health officials most consistently link to large outbreaks. When a food worker with norovirus or salmonella continues handling food without reporting symptoms, every customer served during that shift is a potential victim. There is no barrier between a sick employee and a customer's plate.
The handwashing citation compounds that risk. Inspectors did not find that employees skipped handwashing entirely. They found the technique was wrong.
