BOCA RATON, FL. Inspectors walked into H&H Bagels at 2200 Glades Road on July 24 and found employees who could not demonstrate any allergen awareness, a violation that puts the roughly 32 million Americans living with food allergies at direct risk every time they order at the counter.

The inspector documented six high-severity violations and two intermediate violations during that single visit. The restaurant was not emergency-closed.

The allergen citation was not the only violation that pointed directly at customers. Inspectors also found that employees were not reporting symptoms of illness, a failure that state records categorize as an outbreak enabler. Norovirus and other pathogens spread from sick food workers to customers through exactly this kind of gap in reporting.

Inspectors additionally cited improper hand and arm washing technique. That violation means employees were making handwashing attempts that still left pathogens on their hands before handling food.

The shellfish violations compounded the picture. Inspectors found inadequate shell stock identification records and no consumer advisory posted for raw or undercooked foods. Shellfish served without traceability records cannot be traced back to their harvest source if a customer gets sick. The missing consumer advisory left elderly customers, pregnant women, and anyone with a compromised immune system without the warning that state law requires them to receive.

No person in charge was present or performing duties during the inspection.

A follow-up inspection the next day, July 25, recorded zero high-severity and zero intermediate violations.

What These Violations Mean

The allergen violation is among the most acutely dangerous findings in this inspection. Food allergies send 30,000 people to emergency rooms each year in the United States and cause deaths. When staff at H&H Bagels could not demonstrate allergen awareness, it means a customer asking whether a menu item contains a specific ingredient could not rely on the answer. At a bagel shop where wheat, sesame, dairy, and eggs are present throughout the kitchen, that gap is not theoretical.

The illness-reporting failure operates on a different timeline but carries comparable risk. A single employee working through a norovirus infection can expose dozens of customers before anyone connects the cases. The violation at H&H Bagels on July 24 means the system that is supposed to catch that scenario before it starts was not functioning.

Improper handwashing technique is distinct from not washing hands at all, and in some ways harder to catch.
