An inspector visiting Gecko's Grill and Pub on 55th Avenue East on August 24 found six high-severity violations and one intermediate violation, including failures on sick employee reporting, parasite destruction procedures, and improper sewage disposal. The restaurant was not closed.

The inspection documented that employees were not reporting symptoms of illness, one of the most direct pathways to a foodborne outbreak. It also found that parasite destruction procedures were not being followed, that food contact surfaces were not properly cleaned or sanitized, and that no consumer advisory was posted for raw or undercooked menu items.

A person in charge was either not present or not performing duties during the visit. Inspectors also cited improper hand and arm washing technique.

The parasite destruction failure is among the most specific risks documented in the August inspection. When fish, pork, or wild game is served raw or undercooked without proper prior freezing or cooking protocols, parasites including Anisakis and Trichinella can survive and infect customers. The absence of a consumer advisory compounds that risk: customers who are pregnant, elderly, or immunocompromised had no posted warning that raw or undercooked items were on the menu.

The food contact surface violation means that cutting boards, prep surfaces, or utensils used in food preparation were not properly cleaned and sanitized between uses. That is one of the primary mechanisms for bacterial transfer from raw proteins to ready-to-eat food.

The sewage and wastewater disposal violation adds a separate contamination pathway. Improper disposal of wastewater creates conditions for fecal matter to enter the facility environment, potentially reaching food preparation surfaces.
