FORT LAUDERDALE, FL. Wilton Wings & Pizza on NE 4th Avenue has been inspected 51 times by state regulators, more than any other facility cited this week, and inspectors returned during the week of September 25 to find food from an unapproved or unknown source on the premises, a violation that means the product bypassed federal safety inspections entirely and cannot be traced if a customer gets sick.

That was one of five high-severity violations documented at Wilton Wings & Pizza during the week. Inspectors also found inadequate handwashing facilities, improper hand and arm washing technique, employees not reporting illness symptoms, and food contact surfaces that had not been properly cleaned or sanitized.

Lucky Cat Street Eatery on N Andrews Avenue led all facilities this week with six high-severity violations. Inspectors documented that no person in charge was present or performing duties, that employees were not reporting illness symptoms, that handwashing facilities were inadequate, that handwashing technique was improper, that shellfish records were inadequate for traceability, and that food contact surfaces had not been properly cleaned or sanitized.

Bayview Diner on E Oakland Park Boulevard drew five high-severity violations. The list included no person in charge, employees not reporting illness symptoms, improper handwashing technique, inadequate shellfish records, and no consumer advisory posted for raw or undercooked foods. Four intermediate violations accompanied the high-severity findings.

Bonefish Grill at 300 Terminal Drive was cited for five high-severity violations as well. Inspectors found no person in charge, no written employee health policy, employees not reporting illness symptoms, inadequate shellfish records, and food not cooked to the required minimum temperature.

Unapproved food sources turned up at three facilities this week. Beyond Wilton Wings & Pizza, inspectors cited Cucina Moderna on N Federal Highway and the Marriott Fort Lauderdale North Bluefire Bar and Grille on N Andrews Avenue for the same violation.

Cucina Moderna, which carries only 3 prior inspections on record, accumulated four high-severity violations in total, including improper handwashing technique, unsanitized food contact surfaces, and no consumer advisory for raw or undercooked foods. Inspectors also flagged improper sewage or wastewater disposal as an intermediate violation.

The Marriott's Bluefire Bar and Grille added food not cooked to the required minimum temperature to its unapproved-source and unsanitized-surface findings, for four high-severity violations in all.

Pomperdale Deli on E Commercial Boulevard was cited for four high-severity violations: no written employee health policy, employees not reporting illness symptoms, improper handwashing technique, and unsanitized food contact surfaces.

Undercooked food was flagged at three separate facilities this week. Beyond Bonefish Grill and the Marriott, Olive Garden at 5550 Federal Highway was cited for food not cooked to the required minimum temperature, along with inadequate shellfish records, no consumer advisory, and improper sewage or wastewater disposal as an intermediate violation.

Laspada's Original Hoagies on SE 17th Street drew three high-severity violations, including employees not reporting illness symptoms, improper handwashing technique, and inadequate shellfish records.

Pita Plus on Stirling Road was cited for employees not reporting illness symptoms, inadequate shellfish records, and required procedures for specialized processes not followed, a violation that applies to techniques like curing, fermenting, or reduced-oxygen packaging that require precise controls to prevent pathogen growth.

Einstein Brothers Bagel at 200 Terminal Drive was found with no person in charge, employees not reporting illness symptoms, and no consumer advisory for raw or undercooked foods.

Two other Terminal Drive locations were also cited this week. Pei Wei at 200 Terminal Drive drew violations for employees not reporting illness symptoms and unsanitized food contact surfaces. Bokampers at 300 Terminal Drive was cited for no person in charge and unsanitized food contact surfaces.

Las Vegas Restaurant #5 on E Oakland Park Boulevard and Chipotle Mexican Grill at 4850 N Federal Highway each drew two high-severity violations.

What These Violations Mean

The illness-reporting failures documented this week at eleven facilities, including Lucky Cat Street Eatery, Bayview Diner, Bonefish Grill, Wilton Wings & Pizza, Pomperdale Deli, Laspada's Original Hoagies, Pita Plus, Einstein Brothers Bagel, Pei Wei, Las Vegas Restaurant #5, and others, represent the most direct route from a sick food worker to a sick customer. Norovirus, the pathogen most commonly spread this way, requires fewer than 20 viral particles to cause infection and can contaminate hundreds of meals before a single worker is identified as the source.

The unapproved food source violations at Wilton Wings & Pizza, Cucina Moderna, and the Marriott's Bluefire Bar and Grille carry a specific traceability consequence. Food that enters a kitchen from an uninspected supplier has no paper trail. If a customer falls ill, investigators cannot identify the source, cannot issue a recall, and cannot determine how many other facilities received the same product.

Shellfish traceability failures appeared at six facilities this week: Lucky Cat Street Eatery, Bayview Diner, Bonefish Grill, Laspada's Original Hoagies, Pita Plus, Chipotle Mexican Grill, and Olive Garden. Oysters, clams, and mussels are frequently consumed raw or lightly cooked, and shellfish harvested from contaminated water is a documented vector for Vibrio and hepatitis A. Without proper shell stock tags on record, there is no way to connect an illness to a harvest location.

The undercooked food violations at Bonefish Grill, the Marriott Bluefire Bar and Grille, and Olive Garden describe a gap at the final kill step. Salmonella in poultry survives below 165 degrees Fahrenheit. When food leaves the kitchen below required temperature minimums, any pathogen introduced earlier in the handling chain remains viable on the plate.

The Longer Record

Wilton Wings & Pizza's 51 prior inspections make it the most-inspected facility in this week's roundup by a wide margin. The unapproved food source violation documented this week is not a paperwork problem, it is a sourcing decision, and it appeared despite a state inspection record that now spans more than five decades of visits.

Bayview Diner has 32 prior inspections on record and drew five high-severity violations this week. Las Vegas Restaurant #5, also on E Oakland Park Boulevard, has 30 prior inspections. The two facilities sit within blocks of each other and both produced illness-reporting failures this week.

Pomperdale Deli has 29 prior inspections, and Pita Plus also carries 29. Both were cited for employees not reporting illness symptoms this week. Lucky Cat Street Eatery has 28 inspections on record and produced the week's highest single-facility violation count, six high-severity findings.

Cucina Moderna presents a different kind of concern. With only 3 prior inspections on record, the N Federal Highway restaurant is new to the state's database. It still produced four high-severity violations in that brief history, including food from an unapproved source and improper sewage disposal, violations that inspectors typically consider among the most serious categories on the inspection form.

Bonefish Grill at Terminal Drive has 10 prior inspections, a relatively short record for a national chain location. The absence of any written employee health policy, combined with employees not reporting illness symptoms and food not cooked to minimum temperature, produced three overlapping failure points in a single visit.

The shellfish traceability violation at Chipotle Mexican Grill, a chain better known for burritos than raw shellfish, was among the week's more unexpected findings. Chipotle at 4850 N Federal Highway carries 24 prior inspections on record. Whether shellfish appears on the current menu or as a specialty item, the missing records mean inspectors could not verify the harvest origin of whatever product was on site.
