MIAMI, FL. Inspectors visiting Einstein Bros Bagels at 13725 SW 152 St. on July 28 documented six high-severity violations, including failures in parasite destruction procedures, food cooked below required minimum temperatures, and toxic substances improperly stored or used, and the restaurant was not closed.
The inspection also turned up four intermediate violations: improper sewage or wastewater disposal, faulty sanitizing procedures, misused wiping cloths, and equipment in poor repair. That is ten violations in a single visit at a location with only two inspections on record.
What Inspectors Found
The parasite destruction failure stands out at a bagel shop because lox, smoked salmon, and other cured fish are menu staples. Parasites including Anisakis and tapeworm survive in fish that has not been properly frozen or cooked to kill them before serving.
The food temperature violation compounds that risk. Food not cooked to the required minimum internal temperature is among the leading documented causes of foodborne illness nationwide. Salmonella in poultry, for example, survives below 165 degrees Fahrenheit and can cause severe gastrointestinal illness within hours of ingestion.
