JACKSONVILLE, FL. Food from unapproved sources was on the line at Crafty Crab at 6733 103rd Street when state inspectors walked in on September 15, 2026, and what they found went well beyond a paperwork problem.
Inspectors cited the restaurant for seven high-severity violations and two intermediate violations during that single visit. The restaurant was not emergency-closed.
What Inspectors Found
The food sourcing violation is the one that reaches beyond the kitchen walls. When a restaurant obtains food from an unapproved or unknown source, that food has bypassed USDA and FDA inspection entirely. If someone gets sick, there is no supply chain to trace, no lot number to pull, no distributor to contact.
Paired with that was a citation for parasite destruction procedures not being followed. For a seafood restaurant, this is not a theoretical concern. Fish served without proper freezing or cooking can harbor Anisakis roundworms or tapeworms. Neither is visible to the naked eye in a finished dish.
Inspectors also cited the restaurant for food not cooked to required minimum temperatures and for food contact surfaces that were not properly cleaned or sanitized. Both violations create conditions where bacteria that should have been killed in the kitchen reach a customer's plate.
Improperly cleaned multi-use utensils and inadequate ventilation rounded out the list.
What These Violations Mean
The food sourcing citation is the one that keeps public health officials up at night. Approved food suppliers operate under continuous federal and state oversight, with records that allow regulators to trace an outbreak back to a specific farm, processor, or shipment. Food from an unapproved or unknown source has no such paper trail. If a customer becomes ill, investigators have nowhere to start.
The parasite destruction failure compounds that risk directly. Crafty Crab is a seafood restaurant. Anisakis, a parasitic roundworm found in raw or undercooked fish, causes severe abdominal pain, vomiting, and in some cases requires surgical removal. Proper freezing protocols, mandated by the FDA, kill these organisms before they reach a plate. When those protocols are skipped, the risk transfers entirely to the customer.
Undercooking violations mean pathogens that cooking is designed to destroy, including Salmonella and Listeria, survive in the finished food. The failure to post a consumer advisory for raw or undercooked items means that customers who are elderly, pregnant, immunocompromised, or otherwise at elevated risk have no warning that they are eating something that carries that risk.
Improperly stored or identified toxic substances add a different dimension entirely. Chemical contamination from cleaning agents or pesticides stored near food or mislabeled does not cause a slow illness. It causes an acute one.
The Longer Record
The September 15 inspection did not happen in a vacuum. State records show Crafty Crab at 6733 103rd Street has been inspected 34 times and has accumulated 325 total violations across its history.
The pattern in the recent record is difficult to ignore. The restaurant logged 9 high-severity and 4 intermediate violations in July 2025, then passed a September 2025 inspection cleanly. It logged 8 high and 2 intermediate violations in October 2025, then passed a February 2026 follow-up with 6 high and 2 intermediate violations. It passed a clean inspection in April 2026, then came the September 2026 visit with 7 high-severity citations.
The cycle, high violations, then a clean inspection, then high violations again, has repeated at least five times since mid-2024.
The restaurant's emergency closure history adds one more data point. On September 11, 2019, the state ordered Crafty Crab shut down for roach activity. It was allowed to reopen the following day. That closure is the only one on record, but the violation pattern in the years since has remained consistently serious.
