BRANDON, FL. State inspectors walked into Chick-N-Bones Cafe and Catering on West Lumsden Road on August 12 and left with six high-severity violations on record, including food sourced from suppliers that have not been inspected or approved by state or federal regulators.
The restaurant was not closed.
What Inspectors Found
The unapproved food source violation is among the most serious a food establishment can receive. When food enters a kitchen through channels outside the USDA and FDA inspection system, there is no paper trail. If a customer gets sick, health officials have no way to trace the product back to its origin.
Inspectors also cited the cafe for failing to follow parasite destruction procedures. Fish, pork, and wild game served raw or undercooked require specific freezing or cooking protocols to kill parasites including Anisakis and Trichinella. Without those steps, parasites can survive into the food a customer is served.
A third violation documented that employees were not reporting symptoms of illness. That is a separate and direct exposure risk. A sick food worker handling meals is one of the most consistent factors in multi-victim outbreaks, particularly for illnesses like norovirus, which spreads easily from person to person through contaminated food.
The remaining three violations compounded the picture. Inspectors found that hand and arm washing technique was improper, meaning that even when employees attempted to wash their hands, they were not doing so in a way that eliminates pathogens. Food contact surfaces, including cutting boards and prep equipment, were not properly cleaned or sanitized. And the cafe had no consumer advisory posted for raw or undercooked menu items, leaving customers with no way to make an informed choice about the risk they were taking.
All six violations were classified at the highest severity level. None were classified as intermediate.
What These Violations Mean
The combination of violations documented on August 12 represents nearly every major pathway by which food becomes dangerous before it reaches a table.
Food from an unapproved source means the cafe was using ingredients that bypassed the federal inspection system entirely. Listeria, Salmonella, and E. coli are among the pathogens that inspections are designed to catch. Without that chain of oversight, there is no way to know what entered the kitchen or where it came from.
The parasite destruction citation is specific to menu items involving fish, pork, or wild game served at less than full cook temperature. Florida's food code requires that these proteins be frozen to specific temperatures for specific periods of time before being served undercooked. When that step is skipped, parasites that would otherwise be killed can survive and infect a customer.
The illness-reporting violation is different in kind from the others. It does not involve a piece of equipment or a food product. It involves a person. When a food worker with symptoms of illness, nausea, diarrhea, or vomiting continues to handle food without reporting those symptoms to management, every plate that worker touches becomes a potential vector. Norovirus, which spreads through food and surfaces, can travel from a single sick employee to dozens of customers in a single shift.
The hand-washing technique violation makes that risk worse. An employee who attempts to wash their hands but uses incorrect technique, insufficient time, or skips steps leaves pathogens on their skin. Combined with unsanitized food contact surfaces, the conditions documented at Chick-N-Bones on August 12 created multiple overlapping routes for contamination.
The Longer Record
The August 12 inspection was not an anomaly. The cafe has been inspected 29 times and has accumulated 132 total violations across its history on record.
High-severity violations have appeared in nearly every recent cycle. Inspectors cited two high-severity violations in January 2026, four in a January 2026 visit, two in May 2025, two in January 2025, and two in March 2024. The facility passed clean in March 2025 and November 2023, but those clear inspections sit between repeated high-severity findings.
The August 12 inspection, with six high-severity violations and zero intermediate ones, is the worst single-day result in the recent history shown in the records. The day after, on August 13, a follow-up inspection found two high-severity violations still on record.
The cafe has never been emergency-closed. In nearly three decades of inspections and 132 documented violations, the state has not once ordered the doors shut.

Emergency closure is triggered when inspectors determine that conditions pose an immediate threat to public health. The threshold requires a specific finding, such as a sewage backup, a live pest infestation, or a condition that state regulators determine cannot wait for a routine correction window.
Six high-severity violations on a single inspection, including food from an unapproved source, parasites not destroyed, and employees not disclosing illness, did not meet that threshold on August 12.
