INDIALANTIC, FL. The inspector who walked into Cantina Dos Amigos on North Highway A1A on September 10 found something that should have stopped service immediately: the restaurant had no approved potable water supply.

Water that has not been verified as potable can carry E. coli, Cryptosporidium, Giardia, and Legionella. Every surface washed with it, every food rinsed under it, every ice cube made from it becomes a potential exposure point. The restaurant stayed open anyway.

That was one of nine high-severity violations the state documented that day, along with four intermediate violations. It was not the first time inspectors had found serious problems at this address.

The illness-reporting violation compounds the water problem. Inspectors found that employees were not reporting symptoms of illness, and that the restaurant had no written employee health policy in place to require them to do so.

The sewage disposal violation, classified as intermediate, added another layer. Improper sewage or wastewater disposal creates fecal contamination risk throughout a facility. Combined with no verified potable water, that means both the incoming water supply and the outgoing waste stream were flagged as problems on the same day.

The potable water violation is the one that should concern anyone who ate at Cantina Dos Amigos around September 10. On February 6, 2025, they found 6 high-severity violations. On September 30, 2024, they found 7 high-severity violations. The September 10, 2026 inspection, with 9 high-severity violations, is the worst single-day tally in that recent run.

The one exception in the recent record was October 4, 2024, when the restaurant passed with zero high-severity and zero intermediate violations. That inspection stands alone between stretches of serious citations.

That is an improvement in the count, but it means that even after inspectors had documented 9 high-severity violations and walked out the door, the restaurant was still serving food with high-severity problems on record.

Cantina Dos Amigos remained open through the September 10 inspection and the follow-up. The state did not issue an emergency closure order.
