Specifically while following the product for Quesitos mini bites observed the finished product label was missing the sub ingredients for the filling of bites, the allergen for cheese was declared in allergen statement ( Milk) sub ingredients were corrected on site during the visit by reconstructing the label with all its sub ingredients. x 117.20(b) Citation Description: The plant is not constructed in such a manner as to prevent drip or condensate from fixtures, ducts and pipes from contaminating food, food-contact surfaces, or food-packaging materials. 21 CFR 117.20(b)(4) Observation: Specifically while conducting inspection, observed in both walk in freezers and inside the blast freezer, condensation forming along some walls, along the plumbing, pipes attached to the air blower units, product was observed in these areas but no product found to be adulterated. o 117.35(c) Citation Description: Effective measures are not being taken to exclude pests from the manufacturing, processing, packing and holding areas and to protect against the contamination of food on the premises by pests. 21 CFR 117.35(c) Observation: Specifically while in the dough producing room, during the walk through observed several , to many to count drain flies found mostly near the corner next to cleaning supplies, dust pan, broom, and squeegee. o 117.80(a) Citation Description: Adequate precautions are not taken to ensure that production procedures do not contribute to allergen cross-contact and to contamination from any source. 21 CFR 117.80(a)(4) Observation: Specifically located inside the cheese cut room, dough processing room and the Tequenos rolling room observed cleaning supplies, such as brooms, squeegee, dust pans and brooms stored against the walls in close proximity next to processing tables, dough rollers, cheese grinders. o
