ENCRUSTED FOOD RESIDUE ON THE WALLS NEXT TO THE PREP TABLES AND ON THE FLOORS BY THE
MIXERS IN THE BAKERY PROCESSING AREA AND THROUGHOUT THE FOOD PROCESSING AREA.
OBSERVED SOME STAINED CEILING TILES IN THE BAKERY PROCESSING AREA.

Observation: SPECIFICALLY, OBSERVED BAKING TRAYS WITH ENCRUSTED FOOD RESIDUE ON THE
CORNERS AND BORDERS OF THE FOOD CONTACT SURFACE OF THE TRAY. BAKING TRAYS WERE
HOLDING GRANULATED SUGAR THAT WAS GOING TO BE USED TO SPRINKLE THE BREAD PRODUCTS.
COS: SUGAR WAS VOLUNTARILY DISCARDED BY MANAGEMENT DURING VISIT.

Observation: SPECIFICALLY, OBSERVED HEAVY ENCRUSTED FOOD RESIDUE ON THE MIXERS AND ON
THE SURFACE OF MIXER THAT IS RIGHT ABOVE OF THE BOWL. COS: MIXERS CLEANED DURING VISIT.
OBSERVED SEVERAL FOOD CONTAINERS HOLDING RAW INGREDIENTS THAT ARE USED ON THE
PREPARATION OF THE BREADS AND CAKES WITH ENCRUSTED FOOD RESIDUE. OBSERVED HEAVY FOOD
RESIDUE ON RACKS USE TO HOLD THE BAKING PANS THAT CONTAINS THE BAKERY DOUGH OR THE
READY TO EAT BAKERY PRODUCTS.

OF THE FOOD PROCESSING AREA IS NOT DRAINING WELL AND IS POLLING. FOOD ENTITY MUST FIXED
LEAKING PIPE AND HAND SINK PIPE PRIOR NEXT INSPECTION VISIT.
