Operating without a valid 2023 food permit. o 117.10 Citation Description: Employee did not remove all unsecured jewelry and other objects that might fall into food, equipment, or containers, or remove hand jewelry that cannot be adequately sanitized during periods in which food is manipulated by hand. Both corn and flour tortillas, with a known allergen of wheat, are processed on the semi-automatic tortilla cooling conveyor. o 117.35(b) (1) Citation Description: Cleaning compounds and sanitizing agents used which are not free from undesirable microorganisms or are not safe and adequate under the conditions of use. 21 CFR 117.35(b)(1) Observation: Employees observed only washing food contact equipment with soap in 3 compartment sink and not sanitizing. No sanitizer was available in food establishment. Management obtained chlorine sanitizer during inspection. Employee added sanitizer to 3 compartment sink and begin washing, rinsing, and sanitizing food contact equipment. Chlorine sanitizer measured above 200 PPM. COS- water added to dilute sanitizer to 50 PPM, verified by inspector, and food contact equipment re-washed, rinsed, and sanitized. x 117.35(b) (2) Citation Description: Toxic cleaning compounds, sanitizing agents, or pesticide chemicals not properly identified, held or stored in a manner that protects against contamination of food, food-contact surfaces, or food-packaging materials. 21 CFR 117.35(b)(2) Observation: Quart of 100% petroleum heavy duty oil stabilizer stored directly on top of in-process semi-automatic corn tortilla conveyor. COS- quart of oil stabilizer relocated away from food and food equipment. Management stated this oil is not used on food contact equipment. This is a repeat observation from FDACS inspection dated 9/23/22. x 117.37(a) Citation Description: Plumbing not adequate size and design or not adequately installed and maintained to provide adequate backflow protection from piping systems that discharge waste water or sewage. 21 CFR 117.37(b)(5) Observation: No backflow device on hose used to wash food contact equipment with in 3 compartment sink across from semi-automatic tortilla conveyors. Specifically, hose is attached to hose bib on exterior west side of food establishment and draped on floor throughout food processing area to reach 3 compartment. o 117.37(a) Citation Description: Hand-washing facilities not adequate or convenient. 21 CFR 117.37(e) Observation: No hand soap or paper towels available at either of the 2 hand wash sinks in the food establishment while actively processing and packaging ready-to-eat corn tortillas.
