The finished product label for "Raw Honey Whipped with Real Vanilla Bean" lacked in the ingredient label all the sub-ingredients contained in the organic vanilla bean paste. Additionally, the Nutrition Facts Panel for "Raw Honey Whipped with Real Vanilla Bean" does not follow the FDA Rounding Rules for the value for Protein, i.e. when the value of protein is less than .5 g the value shall be listed as zero. Corrective Action: Owner agreed to contact his label design company and will use up his remaining labels and then place an order for updated labels. o 117.37(a) Citation Description: Plumbing not adequately sized and designed or not adequately installed and maintained to avoid constituting a source of contamination to food, water supplies, equipment, or utensils or creating an unsanitary condition. 21 CFR 117.37(b)(3) Observation: Leak at pipe fitting below the 3 compartment sink in the honey processing room with a drip pan placed underneath the sink that was partially filled with unclean water. o 117.40(f) Citation Description: Instruments and controls used for measuring, regulating, or recording temperatures, pH, acidity, water activity, or other conditions that control or prevent the growth of undesirable microorganisms in food not accurate, precise and adequately maintained, and not adequate in number for their designated uses. 21 CFR 117.40(f) Observation: No pH test strips were on hand for the chlorine based sanitizer that was being used. Corrected On Site: A kit was obtained during the inspection. x 117.40 Citation Description: Food contact surfaces not corrosion-resistant. 21 CFR 117.40(a)(4) Observation: The long hand mixer (immersion type) had some build up of rust on the end of the mixer. Corrective Action: Owner agreed to replace the mixer within the next few months. o
