Swamp Juice hot sauce label did not list water and guar gum on its ingredient list. The same product does not bear a Standard of Identity. Corrective Action: The owner prints ingredient labels on-site and agreed to make the corrections on the label to add guar gum and water and add a Standard of Identity. o 117.80(c) Citation Description: Measures such as sterilizing, irradiating, pasteurizing, cooking, freezing, refrigerating, controlling pH, or controlling aw that are taken to destroy or prevent growth of undesirable microorganisms are not adequate under the conditions of manufacture, handling, and distribution to prevent food from being adulterated. 21 CFR 117.80(c)(4) Observation: The Food Establishment did not follow the scheduled process for the holding step for Swamp Juice sauce as written in the Process Authority Letter dated January 8, 2018. The Process Authority Letter states "Hold filled containers for 6 days, or longer, at 50 degrees Fahrenheit or higher OR 35 hours or longer, at 77 degree Fahrenheit or higher in warehouse prior to distribution." As observed 02/06/24 you are holding Swamp Juice in the bulk container for the specified period of time, as opposed to the finished product container. o
