Comments: This Focused Inspection is being conducted offsite to document a discussion about reduced oxygen packaging for Corvair Filets found in a retail establishment. Spoke to the Plant Manager and he explained that the fish is received frozen and some products are slacked prior to fulfilling customer orders. Reduced Oxygen Packaging for the Corvair filets is poked (hole) prior to slacking then placed into refrigerator. Upon customer order the filets are then packed in a box surrounded on ice and delivered by refrigerated truck to the customer.
