Comments: Citation Description and Observation Citation Description: Cleaning compounds and sanitizing agents used which are not free from undesirable microorganisms or are not safe and adequate under the conditions of use. 21 CFR 117.35(b)(1) Observation: Specifically, your sanitizer bucket located under the sandwich prep station did not register as having any chlorine present when measured with a chlorine test strip. COS-Bucket dumped, remixed and checked. Citation Description: Foods which can support the rapid growth of undesirable microorganisms not held at a temperature that prevents the food from becoming adulterated. 21 CFR 117.80(c)(3) Observation: Restaurant prep- Food establishment does not control pathogen growth in portion controlled potato salad, red beans and rice, scampi sauce, cooked pasta, steak, coleslaw, clam chowder, grits, macaroni and cheese, conk fritter filling, homemade horseradish sauce, chicken, gator sausage, and calamari as evidenced by: ambient temperature of the walk in cooler where these products are stored is 45 degrees F (from condenser fans) and the internal temperature of the products listed measuring between 45 and 48 degrees F. COS- Walk in cooler temperature lowered and all out of temperature food discarded during inspection. Food prepared during inspection for next day was placed in ice bath and temperature of walk in cooler has come down below 41 degrees F. Reviewed your HACCP plan for "Stone Crab Claws (Menippe Mecenaria), Cooked, No-Additives, Processed during open season".
