You are required to register as you pack and hold fishery products at this facility. o INSPECTION: GMP-117 Violation No. Citation Description and Observation COS 117.4 Citation Description: Employees not trained in the principles of food hygiene and food safety. 21 CFR 117.4(b) Observation: No annual training records available for review for employees who receive fish and conduct sensory evaluations and take internal temperatures of histamine fish as there were deficiencies in the monitoring of fish at the receiving step. o 117.40 Citation Description: Food-contact surfaces not maintained to protect food from allergen cross-contact and from being contaminated by any source, including unlawful indirect food additives. 21 CFR 117.40(a)(6) Observation: The 2 white cutting boards in the retail area behind the fresh seafood case were observed to have deep black scores/grooves. o INSPECTION: SEAFOOD HACCP Violation No. 123.11(b) Citation Description and Observation COS Citation Description: Sanitation conditions and practices not monitored with sufficient frequency to assure conformance with Current Good Manufacturing Practices including: Protection of food, food packaging material, and food contact surfaces. 21 CFR 123.11(b) Observation: A pallet of packaged shrimp in the walk in freezer was observed to have clumps of ice on some of the bags of shrimp on the top layers that are in direct contact with the fishery product. Additionally, large clumps of ice were observed on the east wall in the walk in freezer as well as the entrance. A rack with damaged product was covered in ice. Corrective Action: Management agreed to remove and clean the walk-in freezer within the next 7 days. o Print Date: 1/22/2024 Page 1 of 3 123.6(b) Citation Description: Procedures listed in HACCP plan not followed for monitoring. 21 CFR 123.6(b) Observation: Specifically, you are not following your monitoring procedures in your Seafood HACCP plan for "Fresh Fish with potential Scombroid" at the receiving step. Your procedures state that you will monitor the internal temperature of fish at 40 degrees F or less, completely iced, and conduct a sensory evaluation. Fish/Shellfish Unload documents show that on 10/22/2023, 10/24/2023, 11/03/2023, 11/07/2023, 11/13/2023 and 12/09/2023 when you received spanish mackerel no sensory evaluations nor internal temperatures were taken. o 123.6(b) Citation Description: Procedures listed in HACCP plan not followed for verification. 21 CFR 123.6(b) Observation: Specifically, you are not following your verification procedures in your Seafood HACCP plan for "Fresh Fish with potential Scombroid" at the receiving step.
